This week marks the last of my 5 week series of classes at Gilda’s Club.
Today’s topic: Food and Pleasure.
Since the weather is warm, I decided to make a cold rice salad. This recipe calls for black rice, which is also known as Forbidden Rice. I cooked it up in my new pressure cooker the night before class.
Black Rice Salad with Veggies
2 cups cooked black rice
½ cup shredded carrots
½ cup sliced snap peas
1 red pepper, diced
¼ cup red cabbage, sliced
1/3 cup cilantro, chopped
¼ cup soy sauce
2 tablespoons sesame oil
½ teaspoon chili flakes
½ cup olive oil
1 teaspoon maple syrup or brown rice syrup
• Toss veggies and cilantro with black rice.
• Whisk together the liquid ingredients along with the chili flakes
• Toss the dressing with the rice and veggie mixture and serve.
