Today was another one of those rainy days that we’ve been having too many of lately. It was too wet to spend too long outside with my after school garden class. We harvested some herbs and a few leaves of lettuce and headed indoors for some salad dressing taste testing.
Using the fresh herbs and some other ingredients, we whipped up three salad dressings that were proven winners. The kids created an herbal mixture based on the herbs we harvested in the garden. They also zested lemons and squeezed out lemon juice, mashed garlic, measured vinegars and olive oil. Each dressing was made in a mason jar, we shook it up well to mix oil, vinegar and all the other ingredients. Here’s what we did so you can make it at home too. You might want to double the quantities to make a bigger amount. Also note EVOO = Extra Virgin Olive Oil
Honey Mustard Dressing
Basic vinaigrette: 3 tablespoons EVOO and 2 tablespoons red wine vinegar
1⁄2 teaspoon minced garlic
1⁄2 teaspoon fresh herb blend
1 teaspoon Dijon mustard
2 teaspoons honey
Put ingredients into a jar, tight lid, shake well.
Lemon Dressing
3 tablespoons EVOO
3 tablespoons lemon juice
Lemon zest from 2 lemons
1 teaspoon honey
1⁄2 teaspoon fresh oregano
1⁄2 teaspoon minced garlic
Put ingredients into a jar, tight lid, shake well.
Balsamic vinaigrette
3 tablespoons EVOO
1 tablespoon balsamic vinegar
1⁄2 teaspoon minced garlic
1 pinch fresh herbs
Put ingredients into a jar, tight lid, shake well.
