Gobo, carrots & scallions

It almost hit 80 degrees today on this last day of winter. I really couldn’t bring myself to turn on the stove or oven in my kitchen so I quickly whipped up this yummy side dish for dinner tonight.

Burdock, also known as Gobo, is a earthy tasting root vegetable that goes really well with carrots. Gobo is known to be helpful in treating  gout, rheumatism, ulcers, acne, eczema, and psoriasis. It is a source of chromium, iron, magnesium, silicon, cobalt, phosphorous, potassium,calcium, manganese, selenium and zinc along with  thiamine, vitamin C and vitamin A.

For me, I like its earthy taste!  The Asian marinade in this recipe is light with a touch of sweet. Give it a try.

Gobo Slaw

1 cup gobo, sliced into thin dimes

1 cup carrots, sliced into thin dimes

2 tablespoons scallions, minced

1 teaspoon black sesame seed, lightly toasted (optional)

Marinade:

4 teaspoons soy sauce

2 teaspoons toasted sesame oil

1 teaspoon rice vinegar

2 tablespoons honey, maple syrup or brown rice syrup.

Sprinkle sesame seeds over veggies and toss with marinade. Chill for a few hours. The longer it marinates, the better the taste.
