Here’s a simple cookie that is “gluten free” and simply delicious.

Coconut Almond Macaroons

4 large egg whites

½ teaspoon cream of tartar

¼ teaspoon sea salt

1 cup sugar

½ cup coconut

1/3 cup finely chopped almonds

1/2 teaspoon vanilla or almond extract

  • Beat egg whites at high speed until soft peaks
  • Add vanilla or almond extract
  • Add sugar 1 tablespoon at a time until stiff peaks form
  • Fold in coconut and almonds
  • Bake on parchment paper lined cookie sheets at 300 degrees  for 40 minutes
