SuRu's Aloo Gobi

Aloo Gobi is an Indian and Pakistani dish composed of potatoes (aloo), cauliflower (gobi) and indian spices. I make my own version of this dish using leftovers and some frozen peas. Super quick, super yummy and super good for you.

This is an example of my Cook Once, Eat Twice philosophy.  This morning for breakfast, I tossed leftover roasted cauliflower, leftover quinoa, leftover sauteed kale and onions along with a handful of frozen peas into my cast iron fry pan with a touch of coconut oil and some curry powder.  Cooked it on up, stirred it a teeny bit and presto! Breakfast was ready.

It took as long as hubby’s whole grain toast took in the toaster. I had the better breakfast!
